There are a few classic options you’ll hear all around you, from a simple noisette to a classic café crème.

One little tip: if you’re craving iced coffee (café glacé), save that order for a coffee shop rather than a brasserie or sit-down café. Traditional cafés don’t always offer it, and it’s not really part of the classic café culture here.

As someone who’s lived in France and frequented the boulangerie on a daily basis, these are some of the viennoiseries I’ve seen locals order and I’ve quickly fallen in love with too.

🥣 When making muffins at home, here are 3 of my to 🥣 When making muffins at home, here are 3 of my top tips that apply to any kind of muffin batter: 

1. Don’t overmix the batter
Whisk just until the flour disappears. A few small lumps are totally fine — overmixing develops the gluten and leads to dense, heavy muffins instead of soft, tender ones.

2. Toss your mix-ins with a little flour
Dates, berries, chocolate chips — coating them lightly in flour helps keep them suspended in the batter so they don’t all sink to the bottom.

3. Start hot, then lower the temperature
Begin baking at 425°F (220°C) for the first 5 minutes, then reduce to 375°F (or 350°F depending on the recipe) for the rest of the bake. That initial blast of heat gives the muffins a quick rise and beautiful domed tops (This works best when your recipe includes baking powder, which gives that extra lift.)
